In this class, students will learn:

  • Chef Greeley’s “shaping” technique to create interesting borders for the top of fondant covered cakes (bottom tier cake)
  • Beautiful waves that flow nicely along the bottom tier cake
  • Basic airbrushing technique to color bottom cake in gold ( we will use dual action pen and will learn how to disassemble for proper cleaning if it gets clogged)
  • Cracking technique using “Cake Crack”, a new product used to create dimensional cracked texture
  • Students will also learn coloring methods for a more realistic crack finishing
  • Basic Watercolor technique to make beautiful sea horses, stars, and handmade seashells
  • How to make corals and algae using wafer paper and how to color them with powder colors and ever clear
